Remon hotpot, dining in a garden
Hotpot is the religion of Sichuan and Remon hotpot is the post modern.
Located in the southern city office region, Remon hotpot offers a modern touch with traditional taste. Once you enter, you are transported to a tropical rainforest. Not sure how the owner and designer managed to transplant a tree with a forest into the restaurant but it’s a nice touch.
The decor is minimalistic and clean and the hotpot is very traditionally delicious. Remon nailed the two key points of hotpot
Fresh ingredients
Fragrant butter soup base
Pairing a big bold Cabernet with hotpot cuts the grease well and Remon allows you to bring your own booze( beer not allowed) and does not charge a corkage fee. I picked up this bottle at the Annual wine convention in Chengdu called the sugar and wine festival. This is a from a smaller vineyard in Australia and is a fruit forward Cabernet with soft tannins. Good for pairing with the butter soup base.
The soup base is butter based and very dense, the fragrance is there and is very satisfying.
My favorite dish for the night is the grape tomatoes stuffed with plums and layered with plum powder. The plum powder and dried plums goes deliciously with the grape tomatoes.
Beef marinated with chili and spices. This dish looks spicy and it is, it is also very fragrant. You may need to pair it with some beverage.
Below is thinly sliced chicken gizzard. The gizzard is very fresh and does not have any smell to it. Once it is cooked, the texture is crunchy and you can hardly taste the gizzard.
The green vegetables very different, they become crispy once it is cooked, very unique texture for a vegetable. 贡菜 is the Chinese name and it means vegetable to be gifted to the imperial court. The rumour is that in the Qing dynasty, this vegetable was given as a gift to the imperial courts.

This place gets busy, avoid coming during lunch and dinner peak hours
