This is the hotpot that became famous when former British PM David Cameron ate here in 2014. The decor is traditional chinese style and there is one item that stood out, the beef tripe. This place serves the best beef tripe(毛肚) in Chengdu, hands down. Beef tripe is a local delicacy and is a bit scary to look at. Cows have four stomachs and this is made from the third stomach and held up to be the creme de la creme. It takes a lot of preparation to wash, clean, cut and present the beef intestine until it comes out looking like this. If you had beef tripe at dimsum places before and it looks white, it has been bleached before. Tripe from grass/grain fed cows are brown/black in color. This is definitely an acquired taste.  

This intestine is very crispy but also extremely tender. Most places are crispy but hard to chew on but the one served here easily breaks apart and is very satisfying.

The soup base is not the best but will do. The rest of the dishes are better than average for Sichuan hotpot standards.

This is pork kidney (凤尾腰花)the way it is cut is very specific, the chef cuts the kidney at a 45 angle then turns 90 degrees and then cut at another 45 degree angle. The resulting kidney looks like a honeycomb once it is cooked. This maximizes the surface area that the soup base comes into contact and removes most of the smell from the kidney. The texture is soft and similar to tofu.

Just like the french that adore pate, Sichuan cuisine goes further upstream to the intestine. This is goose intestine. A fresh intestine should be almost translucent in color and have no smell. This one is very fresh and crispy after it is cooked.

A frozen jelly to cool off the heat. Mixed with brown sugar, hawthorn flakes and sesame seeds .

Crispy fried pork, can also be cooked in the spicy soup base or just eaten by itself.

Tip:

  • This place is pricey because former PM David Cameron ate here, for better tasting hotpot and better value, i recommend Jincheng yinxiang hotpot

  • The beef tripe is the best in Chengdu
